Banana Bread (adapted from Madeleine Shaw’s Get The Glow recipe)

This Banana Bread is so heavenly! Try serving with a homemade jam for a great tea-break snack!

Ingredients

– 275g buckwheat flour

– 250g coconut sugar

– 1 tsp vanilla essence

– 100g melted Coconut Essence Coconut Oil

– 5 bananas

– 6 tbsp almond milk

– 1 egg

– 1 tsp baking powder

– 1/2 tsp bicarbonate of soda

Method

Preheat oven to 180 degrees Celsius and line a loaf tin with grease-proof paper.

In a food processor, mix all of the ingredients together to form a smooth dough.

Pour into the loaf tin evenly and bake in the oven for 1 hour, ensuring it is cooked through to the middle.

Transfer to cooling rack and leave to cool before slicing.
