Refined Sugar Free Coconut Raspberry Oatmeal Bars

These Coconut Raspberry Oatmeal Bars are perfect for a guilt free treat! They fit perfectly into lunchboxes and taste fantastic with a cuppa!

Ingredients

– 1 1/2 cup buckwheat flour

– 1 cup rolled oats

– 1/2 cup Coconut Essence Coconut Chips

– 1/2 cup coconut sugar

– 1/2 tsp nutmeg

– 1/2 cup Coconut Essence Coconut Oil

– 2 eggs

– 200g raspberries

Method

Preheat oven to 180 degrees Celsius and line a baking tin with grease-proof paper.

In a food processor, blend the buckwheat flour, oats, sugar and nutmeg. Stir in the coconut chips, coconut oil and the eggs until you get a sticky dough.

Separate a cup of dough and leave this to the side. Press the remaining dough evenly into the baking tin using the back of a spoon.

Blend the raspberries until smooth and pour over the top of the dough.

Using the cup of dough left over, crumble this over the top of the raspberries

Bake for 35 minutes until the top is golden. Transfer to cooling rack.
